I haven't posted a recipe in a long time so I thought I'd give you last nights supper- Onion smothered pork tenderloin. I halved the recipe
2 (3/4- pound) pork tenderloins, fat trimmed
cooking spray
2 teaspoons margarine or butter
2 cups sliced onion
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp pepper
Preheat oven to 400*. Cut a lengthwise slit down center of each tendefloin, cutting about two-thirds of the way through meat. Place on a broiler pan coated with cooking spray. Insert meat thermometer into thickest portion of meat.
Melt margarine in a large non-stick skittet over med-high heat. Add onion, and saute 5 to 6 minutes or until tender. Add thyme, salt, and pepper. Spread onion mixture evenly onto cut tenderloin. Bake at 400* for 45 min or until meat thermometer registers 160*. Yeilds 6- 3oz servings.

I am still here
It is spring break this week, so we are taking advantage of the church nursery while there are no students around. The kids are playing and I am using the wireless. I haven't posted in a long time so I thought I'd let you know what I'm up to...nothing. I mean- taking care of my family. I do have an exciting blog I've run across. It is moneysavingmom.com. This lady is all about saving money. And I happen to be very interested in saving money. So if this interests you go check her out. She does weekly posts on Walgreens and CVS deals. We only have a Walgreens but if the CVS deals are as good as the Walgreens ones, I envy those of you with both.
So that is what I'm doing. Trying to take care of my family, but learning to do it for less $$, more efficiently, etc. Do you have any tips to share? Leave them as a comment.

Misc
I turn another year older this week. But apparently you can't tell. One of the babysitters for the Tuesday morning bible study I've been going to told me two weeks in a row, as I picked up my baby, "You look too young to have kids. Are you even 20?'' Mmmm yes. In fact I'm a little to close to 30 for my own comfort. But I smiled and told her thank you and then went to pick up my other three monsters, and then went home to nurse my aching back.
We've really taken to going to the library. They have different toys than we do at home, it gets mom out of the house, and we get to bring a new selection of books home. So last week the kids were playing with this really cool wooden doll house that they have- and a couple of other little girls came up and started playing too. I started paying a little more attention, so I could make sure my kids were sharing. All of the sudden one of the girls (not mine) says ewww. I look up. She has pulled a big, slimy, nasy booger out of her nose. So then I'm wondering what is she going to do. She wrinkles her nose a couple of times, switches it back and forth a few times on a couple of different fingers, and then, yes you guessed it, licked it off. Well a minute later, ewwww, she had done the other side. Same routine. Well after hoping my kids were not watching her, I had to give her points...at least she didn't wipe it on the table. We left soon after.

Death by Chocolate
For those of you who like chocolate and short-cuts, try this one out.
Chocolate Bundt Cake- or Death by Chocolate Cake
1 package (18 1/4 oz) chocolate cake mix
1 package (3.9 oz) instant chocolate pudding mix
3 Tablespoons baking cocoa
1 3/4 cups milk
2 eggs
2 cups (12 oz) semisweet chocolate chips
In a large mixing bowl, combine all ing. except chips. Beat on low speed until moistened. Beat on med speed for 2 minutes. Stir in chocolate chips. Pour into a greased and floured 10 inch fluted tube pan. Bake at 350* for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes: remove from pan to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
This cake is very rich. And is excellent alone or served with vanilla ice cream.

How funny...I have the hic-ups!
Tonight after her bedtime feeding, the baby got the hic-ups. She thought it was soooo funny! It went something like this- hic, giggle, hic, giggle. And of course I was sitting there busting a gut- it was so darn cute. Ahh I love babies.

So much to do...

New Baby
Well, a surprisingly long pregnancy (I have only carried to 36 weeks on any of the others) ended this morning(at 39 weeks). We have another girl...8 lbs 1 oz....20.5 inches...born at 8:20am on June 5. I don't like to put the kids names on here so you'll have to contact me for that info. She has plenty of black hair, and looks a bit like my mom.
I will post more later. I haven't posted for a while so I have some catching up to do.
